Bacon Wrapped Asparagus with Caramelized Onions


ASPARAGUS:
1. Trim the ends off asparagus spears. Make sure they are still fresh if you can still hear a snap when you bend one.
2. Blanch in salted boiling water until tender but not soft.
3. Drain and coat with olive oil.
4. Grill until desired doneness is achieved and cut in half and set aside.

BACON:
1. Once the asparagus is cool to the touch, wrap with Honey cured bacon strips.
2. Hold in place with toothpicks.
3. Coat the pan with a little oil and fry the bacon wrapped asparagus until bacon is crispy and set aside.
4. Caramelize 1 large white onion (minced) with 1 tsp sugar until onion is almost disintegrating. Season with salt and pepper to taste.

To serve, lay out some iceberg lettuce leaves on a plate and place on top the bacon wrapped asparagus and spoon over the caramelized onion. Sprinkle some toasted sesame seeds
