Mini Burgers and Mini Sandwiches


VEAL BURGER:
1. Mix in a bowl 500g of ground veal, 1 large white onion (grated), 3 cloves of garlic (minced), salt, pepper, 1 tsp Nutmeg, ¼ cup chopped flat leaf parsley and 1 egg yolk.
2. To make the burger juicy mix in another bowl 1 cup breadcrumbs with 1 cup milk. After which add it to the veal mixture.
3. Form the veal into mini burgers and chill in the ref for 15 minutes.
4. In a griddle, cook the mini burgers according to preference.

To serve, cut mini whole wheat buns in half and spread mayonnaise on the bottom half. Place lettuce leaves then the burger patty, then the caramelized onions, 1 sliced Tomato, 1 sliced Cucumber, and Yellow Mustard on the top half.

MINI SANDWICHES:
1. Layer in a mini baguette the following: spread mayonnaise on the bottom half of the mini baguette, place lettuce leaves then 1 pc Ham Lyoner, 2 pcs Pepperoni, 1 pc Salami, 1 pc Honey Ham, 2 slices Tomato, 2 slices Cucumber and Yellow Mustard on the top half.
