Rellenong Pusit with Squid Ink Rice and Side of Papaya Shrimp Salad


The recipes for the Papaya salad and Stuffed Squid are in other posts.

SQUID INK RICE:
1. Use the squid ink from the 2 large squids discarded in the Rellenong Pusit dish.
2. Sauté in pan 2 tsp oil, 1 small white onion (minced) and 2 cloves of garlic (minced).
3. Add the squid ink and season with salt and pepper to taste.
4. Once cooked, add 4 cups of cooked white rice and mix well.

To plate, place a cup of the squid ink rice on a plate. Ladle in a small amount of carrot coulis on the side and place two slices of the stuffed squid. For the side salad place some Papaya Shrimp salad opposite the stuffed squid.
