Seared Tuna with Teriyaki Sauce (Maguro Tataki)


1. Choose a good cut of tuna fillet.
2. Roll the tuna in a mixture of salt, freshly ground black pepper and cayenne.
3. On a very hot pan add some 2 tsp oil and sear each side for about 30-40 seconds depending on the thickness of the tuna. Set aside to rest.
4. Reduce some teriyaki sauce for an intense flavor. If you don't have any teriyaki sauce you can make some using the following recipe:

TERIYAKI SAUCE:
Combine the following in a sauce pan, 2 cups soy sauce, 1 cup sugar, 1 tbsp molasses (optional), 1 oz dry sherry or bourbon. Cook over low heat stirring until sugar has dissolved. Add 1 tbsp freshly grated ginger and 3 cloves garlic (grated). Strain to remove the ginger and garlic. Set aside to cool.

5. Once the tuna has rested around 5 minutes, slice and layer as shown above.
6. Drizzle the teriyaki sauce over the seared tuna and add some toasted white sesame seeds.
7. Garnish with some fried spring onions.
