Dory with Balsamic Honey Sauce paired with Crab Fat Rice and Cabbage Slaw with Mandarin Orange Wedges


COLESLAW:
1. 2 cups shredded cabbage.
2. Mix with ½ cup carrot strips.
3. Add ¼ cup Mayonnaise and ¼ tsp olive oil
4. Add ½ tsp vinegar, ½ tsp sugar and season with salt and celery salt to taste.
5. After mixing the slaw add Mandarin Orange wedges.

CRAB FAT RICE:
1. Cook in 2 tsp oil, 3 cloves garlic (minced). Cook until brown but not burnt.
2. And in the same pan 1 cup of any store bought cooked crab fat (aligue).
3. Once heated through mix in 4 cups of steamed rice.

FISH with BALSAMIC HONEY SAUCE:
1. Use 2 fillets of either Sole or Dory.
2. Season with salt and pepper and pan fry until golden brown. Drain and set aside.
3. In a saucepan reduce ¼ cup of balsamic vinegar and 2 tsp of honey with 1 tsp of fresh rosemary.

To serve, place a mound of the Crab Fat Rice and side it with the coleslaw and fish fillet. Top the fish with the balsamic honey sauce reduction.
