Spicy Dory with Butter Honey Cream Sauce and Fresh White Mushrooms sautéed in Light Soy Sauce


FISH:
1. Cut Dory (you may also use Sole) into serving pieces.
2. Season with salt, pepper and paprika.
3. Grill until done and set aside.

BUTTER HONEY CREAM SAUCE:
1. In a sauce pan combine 1 cup cream, 4 tbsp honey, ½ stick of butter.
2. Season with salt and freshly ground black pepper to taste.

MUSHROOMS:
1. Slice 6-8 fresh white button mushrooms.
2. In a pan sauté the mushrooms together with 1 medium white onion (slivered) in 1 tsp butter and 2 tsp of light soy sauce.
3. Add chopped spring onions towards the end.

To serve, plate the mushrooms first and top with the fish on the side. Spoon the honey butter cream sauce on the fish and sprinkle with finely chopped parsley.
