Tilapia Fillet with Red Kidney Beans and Fresh Brown Mushrooms


KIDNEY BEANS:
1. Drain 1 can of red kidney beans and rinse with cold water.
2. If you don’t have canned beans, soak dried red kidney beans overnight, drain and boil in salted water until tender.
3. Sauté the kidney beans with 4 strips of bacon (chopped) and set aside.

MUSHROOMS:
1. Chop 8 fresh brown mushrooms
2. Sauté in 2 tsp oil and 1 tsp butter keep warm and set aside.
3. Caramelize in low heat 1 cup of sliced white onions in 2 tsp olive oil and once soft set aside.

FISH:
1. Fillet one large Tilapia and discard the head and bones (or you may opt to use it for presentation purposes)
2. Season the Tilapia fillet with salt and pepper and lightly coat with flour. Shake off excess flour.
3. Deep fry until crispy.

To serve, arrange on a plate with the red kidney beans, fresh brown mushrooms and top the fish with the caramelized onions and chopped spring onions.
