Shrimp Papaya Salad


1. Slice 1 medium ripe Papaya. Make sure that it is not over ripe as this will disintegrate once tossed with the dressing.
2. Boil 250g of shrimps in water. Season with salt and pepper.
3. After the flesh turns pink shock the shrimps in ice cold water.
4. Drain and dry the shrimps then peel the shrimp and discard the heads.
5. Cut them in half along the vein and remove the entrails.
6. Slice 1 small red onion (very thin) and press between paper towels.
7. Put the papaya, onions and shrimps in a bowl and toss with the dressing.

DRESSING:
1. ½ cup Red Wine Vinegar
2. 2 tsp Honey
3. 3 tsp EVOO
4. Dash of Salt
5. Dash of Pepper

To serve, toss lightly in a salad bowl and add chopped cilantro for additional flavor. Best served chilled.
