Grouper Parcel


1. Cut out large (8”x11”) HEART shaped parchment papers and place the following inside.
2. Have your fish monger fillet a large Grouper (Lapu-Lapu) and cut into serving sizes.
3. Julienne the following vegetables into 4 inch strips (Red, yellow and green bell peppers, carrots and zucchini).
4. Combine and lay the veggies on one side of the parchment paper (Do not make the layer of veggies too thick).
5. Season with salt and pepper.
6. Place a fillet of Grouper on top of the veggies.
7. Season with salt, pepper, and dried oregano.
8. Squeeze some lemon juice on the fish and place a slice of lemon.
9. Drizzle some EVOO and close the parchment paper by folding the edges starting at the tip of the heart.
10. Place in the oven at 300’F – 350’F for 10-12 minutes.

To serve, place on the plate and open when ready to eat. Be careful of the steam coming out.
