Tuna Sisig


1. Cut into small cubes around 250g of tuna and set aside.
2. Sauté in a wok 2 tsp oil, 1 large white onions (minced) and 2 cloves garlic (minced) until translucent.
3. Add the diced tuna and toss gently so as not to crush the tuna.
4. Add 1 cup soy sauce, ½ cup sugar, and ½ tbsp ginger (grated).
5. Season according to taste with salt, freshly ground black pepper, sweet paprika and cayenne pepper.
6. Mix a fresh batch of 1 small white onion (minced) and 1 small red onion (minced). For heat you may add some chili peppers "sili".
7. Add ½ cup mayonnaise and serve in a sizzling platter topped with a quail egg.
